Rice pudding, caramel coulis or red fruits Tourisme Dessert Eng
Ingrédients
For 10 people :
– 240 gr (0.5 lb) of round rice
– 2400 ml (81 oz) of milk
– 1 vanilla pod (or vanilla extract) or cinnamon
– 120 gr (0.25 lb) of white sugar
– 1 green lemon (zests)
Winter : salted butter caramel
– 160 gr (0.35 lb) of white sugar
– 80 gr (0.17 lb) of salted butter
– 20 cl (6.7 oz) of sour cream
Summer : season fruits coulis
– 200 gr (0.44 lb) of strawberries or raspberries
– 20 gr (0.05 lb) of white sugar (if necessary)
Étapes de la recette
Rice pudding :
– In a large pot, bring to a boil the milk with the sugar.
– Deseed the vanilla pod : to do so, open it in half lengthwise, and collect the vanilla seeds with the back of your knife. Add those seeds into the milk.
– Once the milk is simmering, add the rice in a small rain to it.
– Let cook at low heat (slight simmer), regularly stirring with a wooden spoon, without letting the milk boil, until it is almost absorbed.
– Once it’s ready, take the pot from the heat and let the rice finish inflate.
– Let cool down before enjoying it !
Caramel :
– Heat the sour cream and reserve.
– Into a small pot, add a little water.
– Add the sugar uniformly. Let the whole caramelize until you get a nice colour.
– Once the caramel is cooked, add in three times the sour cream out of the heat.
– Then, cream the butter, whipping vigorously.
Fruits coulis :
– In a pot, let the selected fruits chopped into pieces stew. Let cook at low heat.
– If necessary, add the sugar.
– Mix and reserve in pipette.
