Ingrédients

For 10 people :

Financiers :
– 220g (0.5 lb) of icing sugar
– 110g (0.25 lb) of almond powder
– 70g (0.15) of flour
– 200g (0.45 lb) of egg whites
– 200g (0.45 lb) of butter

Mascarpone whipped cream :
– 150g (0.33 lb) of mascarpone
– 230g (0.5 lb) of 35% cold sour cream
– 35g (0.08 lb) of icing sugar
– 1 vanilla pod

Red fruits :
– 500g (1.1 lb) of fresh raspberries – take some raspberries coulis out of season

 

Étapes de la recette

Financiers :
– Preheat the oven at 180°C (81°F)
– Cook the butter “hazelnut” : melt it into a pan and cook until it gets a golden colour. When the butter stops foaming, filter it and let it cool down.
– Mix the egg whites, the sugar, the flour and the almond powder with a spatula without incorporating some air.
– Then add to this mix the melted butter, let cool down the dough.
– Butter or line some small individual molds, then pour the financiers dough into those molds and put into the oven for 20 minutes.
– Take out of the oven, unmold the financiers and let cool down.
