Ingrédients

For 10 people :

– 10 egg yolks
– 100 gr (0.2 lb) of white sugar
– 625 gr (1.3 lb) of milk
– 625 gr (1.3 lb) of liquid sour cream
– at least 200 gr (0.4 lb) of brown sugar
– 1 tonka bean

Étapes de la recette

– Preheat the oven at 110°C.
– Whiten the egg yolks with the white sugar.
– Incorporate the milk, the sour cream and the grated with a microplane tonka bean (very finely chopped).
– Fill the cake pan and bake in a bain-marie without coloration for 50 minutes to 1 hour at 110°C.
– Caramelize the sugar with a blowtorch and enjoy immediately.
