For 10 people

20/30 biscuits (spoon-like)
500g (1.1 lb) of thick cottage cheese
400g (0.89 lb) of cream cheese (St Morêt)
2 yellow or green organic lemons
120g (0.26 lb) of powdered sugar
500g (1.1lb) of seasonal fruits (prunes, strawberries, pears, apples, clementines…)
20cl (6.8 oz) of apple juice
1/4 bunch of mint

Étapes de la recette

In a bowl, blend the cottage cheese, the cream cheese and the sugar. Zest the lemon into the cheese and add the lemon juice. Place the cheese into a pastry bag.
Cut the biscuits to the height of the verrines.
Soak the biscuits rapidly in the apple juice and put them vertically in the verrines.
At the bottom of each verrines, put a few fruit pieces, and dress the cheese into the verrines (only half of the cheese), using the pastry bag. Place another layer of fruits, and add the final layer of cheese. Top with a few more fruits.
Reserve the prettiest mint leaves for the dressing and a few well chopped fruit pieces, don’t forget to zest a little lemon for more flavor, bon appétit !
